What are Microgreens?

The way that we grow and harvest our greens is what makes them microgreens! Microgreens are older than sprouts, but younger than baby greens and have a unique growing process. The seeds that we use for our microgreens are the same seeds that would grow the full grown version of the same plant! However, our microgreens are planted much more densely than traditional veggies and are only 10 days old when we harvest them. The plants may be small when harvested, but they are packed with nutrients and flavor!

They're nutrient dense and tasty!

Every seed, for any plant, has enough nutrients and energy stored inside itself to grow for the first few weeks. Since microgreens are harvested at only 10 days old the micros can grow off of their stored resources, so they don't require any added nutrients or fertilizer. With being so young, microgreens haven't had their growth spurt yet. All of the nutrients and vitamins needed to grown to maturity is still stored inside the tiny microgreens. Harvesting the micros at such a young stage makes them incredibly nutrient dense because of those stored resources. An ounce of broccoli microgreens can be up to 40 times more nutritious than an ounce of full grown broccoli. This is why microgreens are considered a super food! 

How do you eat microgreens?

We get asked this a lot, and the answer is on everything! Microgreens can be put on salads, sandwiches, burritos, casseroles, pasta dishes, eggs, tacos, and just about anything else you can think of. Each variety of microgreen has a unique flavor, and usually tastes similar to the full grown vegetable of the same variety. No matter what you're eating, there is a microgreen that will go perfectly with it!
